As promised earlier let me explain that important difference between ice cream and gelato. Traditional ice cream is a dairy product made with a lot of cream. Lot of cream means high fat content – this prevents it from crystallisation in low temperatures, but on the other hand is not good for your health. Handmade gelato is low in fat, we use full cream milk, but only very small amount of cream so it has fat content of less than 6%. Consumers today demand healthy products and our sorbets are even better at 99% fat free.
